Persimmon – Diospyros kaki – is an Asia-like, orange-like fruit, similar in shape to a tomato. It has a pleasant taste and rich nutritional content.
In fact, it is one of the most nutritionally rich fruits: it contains vitamin A, complex B, P, C, but also minerals such as sodium, magnesium, copper, potassium, selenium and large amounts of iron and zinc. Persimmon is richer in potassium than banana, and studies have shown that it has twice as many fiber than apples, is richer in antioxidants than green tea, very rich in organic acids, tannins, proteins, betacarotene, and carbohydrates. Due to the richness of minerals and vitamins, the consumption of this fruit is beneficial in preventing atherosclerosis, cellular DNA changes, in reducing oxidative stress. At the same time, Persimmon helps to increase immunity, being indicated in the transition periods of time, spring and autumn, in the prevention of seasonal diseases and respiratory viruses.
Since it is considered to be an alkaline fruit, Persimmon helps to lower both gastric and blood acidity, thus regulating metabolism. It also counteracts depression and fatigue. It is also indicated for stomach pains, helps improve vision and skin quality, and red blood cell production. It is a good adjuvant for weight loss, it combats infections and inflammation, it reduces cholesterol, it is a good antihemorrhagic, it is indicated in diabetes and hypertension, it increases the level of energy and contributes to the fight against cancer. In traditional Chinese medicine, Persimmon is also used as a remedy against hiccups.
This fruit is picked late autumn and can be eaten fresh, dry, jam or included in various salads and sweet dishes. It is recommended to consume with the shell.
Smoothie of Persimmon and kiwi
Ingredients: 1 Persimmon, 2 teaspoons of well-dried goji fruit, 1 teaspoon of raisins, 1 banana, 150 ml of water; 4 kiwi, 1 spoonful of nutmeg, 1 spoon of honey, 1 teaspoon of chia seeds, 150 ml of water.
Preparation: Prepare the Persimmon smoothie first; cut the fruit into pieces, add goji, raisins, banana and water. Mix for 2-3 minutes, then top up the contents in two large glasses.
Kiwi Smoothie: Put nuts kiwi cleaned in the blender together with nuts, chia seeds, honey and water spoon; mix for 2-3 minutes, then pour into the two glasses. It is served immediately. Due to its consistency and nutritional properties, it can replace breakfast.
Jam from Persimmon fruit
Ingredients: 7 Persimmon fruits; 150 g of sugar; 1 lemon; 50 ml rom.
Method of preparation: Clean the nuts and put together with the sugar in a small fire pot, add the lemon juice, then boil for about 20 minutes. Place the jam in sterilized jars, leave for 10 minutes with the lid down, and after they have cooled completely, store them.
